Too Cute/Fur Babies

After four days in Las Vegas celebrating a bachelor/bachelorette party for our friends, the Future Caseys, I was happy to be back in Austin last night. Before drifting off to sleep, I discovered Too Cute! Kittens on Animal Planet. It is a documentary that follows three kitten litters. "From unsteady first steps to daring kitty pounces, the first 8 weeks of their lives will be an epic journey for these adventurous Abyssinians, brash Bengals and perfect Persians."

I was so moved by the momma cats and how they took care of their little ones. At one point, the runt of one of the litters, "Tiny Dancer," is crying because she can't yet see or hear, and cannot find her mommy. But momma cat reaches over and puts her paw on baby's back to comfort her. It was just incredible to see how wonderful mother nature works.


As I type this, my own four-legged fur babies are flanking my legs. Talullah Belle on my left, Bayla D'Lane on my right, both snoozing away, happy to have "Mom" home from vacation.



I didn't give birth to them, but they are my babies just the same.

Nothing interesting to say...

Ok, it's not that I'm lazy...busy, maybe. Well, not "maybe." I am definitely busy. But, really I haven't blogged since April because I felt like I had nothing interesting to say. I still don't, but I have gone through some major life changes over the past few months.

1.My little brother graduated high school, turned 18, and moved in to his dorm at Texas A&M University--whoop!

2. My sister was promoted to high school. Good grief I'm getting old.

3. I changed jobs from a non-profit one to the corporate world--hello, Dell!

4. I'm almost done with my new years resolution to pay off my credit card debt...just last week I wrote the check to pay off my car (early)!

So, things are going well... I'll let you know when I have something interesting to say.

Chicken Pillows

These are delicious, and I even altered them a bit because I was impatient didn't have all the ingredients.

Chicken Pillows

Mix together with mixer (or by hand if your cream cheese is soft enough):
8 ounces cream cheese, softened
½ cup sour cream

Stir in:
½ teaspoon salt
¼ teaspoon pepper
1 ½ Tablespoons dried chives
1 ½ Tablespoons fresh onion minced
3 chicken breasts, cooked and diced (around 3 cups)
2 (8 ounce) cans Pillsbury crescent rolls
1/4 cup melted butter
Italian bread crumbs (around 2 cups)

Gravy:
1 (14.5 ounce) can cream of chicken soup
1 (0.87) package chicken gravy mix

Preheat oven to 350 degrees.

Using Pillsbury crescent rolls, take 2 triangular rolls and push together at perforated seam to make into a square. Make sure you seal the perforations well so your filling doesn't come out. Put about 3 tablespoons of chicken mixture in the center of each square. Fold the dough corners to the center over the chicken mixture forming a pillow.

Dip each pillow in melted butter on both sides. Roll in bread crumbs on both sides. Shake excess crumbs off. Place chicken pillow on cookie sheet and bake at 350 degrees for 20-25 minutes.

Make gravy by mixing one package of chicken gravy mix, one can of cream of chicken soup and 3/4 can of water in a small pot. Mix together and heat until warm. Serve chicken pillows with gravy poured over top.

I left out the "roll in butter and dip in crumbs" part. I also left out the chives and onions and I didn't make the gravy. I used chicken from Monday nights meal and just diced it up. It already had flavor, so leaving out the onions and chives didn't affect it, it just probably would have had a different taste. Regardless, it was delicious!

The Holiday Tree {Branches}

Whoa. 3 posts in one day?! I'm on a roll...but I couldn't wait to share this with you!

I have previously mentioned my "holiday tree" here...and here...

...and now it's HERE! I ordered Manzanita branches and they are not exactly what I had pictured in my head; however, they are making an adorable holiday tree in my office, and this little gem is the first decor to go up!


Glittery yellow chickadee. Pink tutu. Purple bow. Could I really pass her up? Not a chance! But, she needs friends. I'll get her some, soon.
