Little Girl in the Big City, OR "Pink Lady in the Big Apple"

Well, I suppose I have put this off long enough. There is just SO much to tell that I don't know that I'll remember everything. Thankfully, I used Facebook's handy little "check in" everywhere I went, just to make it easier to remember what I did while I was in NEW YORK CITY!

All-in-all, New York was incredible. It was also incredibly COLD. Bone-chilling, frost-biting cold. At one point the news said, "It's 16* but it feels like 4*." To me it actually felt like -100*, but who's counting?

Cricut-made Bachelorette Party Card

On Saturday I made the trip up to Fort Worth to celebrate with my friend and sorority sister Janell for her Bachelorette Party. I am going to her wedding in NYC in less than 2 weeks and I couldn't be more thrilled!

So, I decided to try my hand at card making with the Cricut.


Nothing says "Kappa Bachelorette" like animal print and fleur de lis!

One blog too many...

I was contemplating a fourth blog, but my rational friend Erin stopped me. I really wanted to start a crafting blog, especially now with my new Cricut. She suggested I combine my cooking blog with my "regular" blog for a couple of reasons: 1. 4 blogs is too many to keep up with. 2. 4 blogs is too many for my readers to keep up with. Both very good reasons...

So, I have combined my cooking blog, Waldie in the Kitchen, with my original Where's Waldie? blog. Now, I am considering a new title. One I always come back to is Domestically Waldie, because, well, I love being domestic. My blog will now be a compilation of little life stories, daily "happenings," yummy recipes, and most importantly, crafting!

Have a good new Waldie title I can use? Let me know!

Thai Peanut Slaw in Wonton Cups

I am excited about this recipe because I get to use the wonton wrappers I've had for some time now and I'll have another use for the sesame oil and sesame seeds I bought to prepare the Honey Soy Chicken Wings I made for last Friday's pre-NYE bash potluck dinner!



Ingredients
18 won ton wraps
1 (12 oz) package of rainbow slaw (broccoli, cauliflower, carrots and red cabbage)
1/4 cup smooth peanut butter
2 tbsp sugar1/3 cup water
1 tbsp reduced-sodium soy sauce
1 tbsp sesame oil
1/4 tsp garlic powder
1/4 tsp crushed red pepper flakes
1 lime, juiced
3 green onions, green parts only, diced
1/3 cup peanuts, chopped
1 tbsp toasted sesame seeds

Directions
1. Preheat oven to 350 degrees. Turn two (12 cup) muffin tins over and lightly spray cup bottoms with cooking spray. Spray one side of won ton with cooking spray and drape lightly (sprayed side down) over each muffin cup, molding it gently around the cup to shape it. Lightly spray the won ton cups again with cooking spray and place pan in oven. Bake for 5-6 minutes or until edges are brown. Remove and cool on wire rack before removing cups from pan.

2. In a microwave-safe bowl combine the peanut butter, sugar, water, soy sauce, sesame oil, garlic powder and crushed red pepper flakes. Microwave on high for one minute. Stir well until smooth. Add lime juice and stir again. Set aside to cool slightly.

3. Place slaw mix into a medium size mixing bowl. Combine slaw with dressing. You may or may not need all the slaw or all the dressing depending on how "dressed" you like your salads.

4. Fill won ton cups with salad mixture. Top with green onions, peanuts and sesame seeds.

What I did differently:
1. The original recipe said to use Splenda. I'll use sugar.

2. Using the same cooking technique I used to make the chicken for the Shredded Tex-Mex Crockpot Chicken recipe, I think I am going to add chicken.

2011, um, goal?

So I am not great at keeping New Year's resolutions, nor am I great at maintaining "non-resolution challenges."

Last year I decided that instead of calling it a "resolution," I'd call it a challenge. I'm competitive, so a challenge sounded a bit more, well, competitive. I "challenged" myself to go to the gym 100 times BEFORE purchasing another item of clothing. Well, I definitely hit the gym at least 100 times last year, and I am a few pounds lighter to prove it; however, I couldn't stop myself from shopping. The good news is that I dropped a pants size, so essentially, my plan worked. Sort of. Whatever.

Anyway, it's that time again...time to set a goal I probably won't reach. I did figure out that  I set the bar just a tad too high last time. I didn't give myself any benchmarks to celebrate my success along the way. Lesson learned.

So, without further ado, I give you:
My 2011 resolution challenge goal!
Pay off my credit card debt. ALL of it. One. Card. At. A. Time.

There are a few other things I'd like to do in 2011, but I'm not setting any concrete goals, per say.
1. Run Complete another 5K.
2. Build up my savings account. (We'll see how this one works with paying off debt...)
3. Continue my weight loss plan by eating healthy, working out, and drinking more water.
4. Read a book or two...for fun. (This might be hard with classes starting back up in just a couple weeks.)
5. Increase young alumni participation in the Austin Kappa Alumnae Association.

PS I had a wonderful NYE this year. The best since Loren and I spent it on 6th Street the year we both turned 21.
